Ingredients

  • 500 grams 500 Cabbage (thinly chopped)

  • 2 cup 2 squash (grated)

  • 2 pieces 2 eggs (large)

  • 1/3 cup 1/3 Potato starch

  • 1 tablespoon 1 Salt

  • 1 tablespoon 1 pepper

  • cooking oil

Directions

  • Slice the cabbage thinly and grate the squash. Make sure to drain the water from the squash to prevent the patties from becoming too wet.
  • In a large mixing bowl, combine the cabbage, squash, eggs, potato starch, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
  • Place a pan over medium heat and add canola oil. Let the oil heat up for a minute.
  • Scoop 1/4 cup of the vegetable mixture and carefully place it in the pan. Gently press down to form a patty shape.
  • Fry the patties until golden brown on one side, then flip and cook the other side until equally golden brown. This should take about 3-4 minutes per side.
  • Once both sides are golden brown, remove the patties from the heat. Serve them hot with a side of ketchup and enjoy!

Equipment

Notes

  • After grating the squash, place it in a clean kitchen towel and squeeze out as much water as possible. This prevents the patties from becoming too moist and falling apart.
  • A non-stick pan can help ensure the patties cook evenly and prevent sticking, making it easier to flip them without breaking.
  • Cook the patties in batches to avoid overcrowding the pan. This allows each patty to cook evenly and achieve a nice golden brown color.
  • While ketchup is a classic choice, you can also serve the patties with other dipping sauces like tzatziki, ranch dressing, or a spicy aioli for a different taste experience.
