Last summer, I was looking for a quick yet delicious meal to prepare for my family. We had just returned from a long day out, and everyone was hungry and craving something different. I glanced at the pantry and saw some flour, eggs, and a few fresh vegetables. Inspiration struck, and I decided to create something new—Scrambled Egg Wraps.

When I served the wraps, my brothers couldn’t wait to dig in. The combination of the crispy, homemade wrap with the creamy, savory filling was a hit. They loved the fresh herbs and the caramelized onions, and appreciated the wholesome, homemade touch. Ingredients

  • 1 cup 1 all purpose flour

  • 3 pieces 3 eggs

  • 1/4 cup 1/4 parmesan cheese

  • 1 piece 1 tomatoes (chopped)

  • 1 piece 1 onion (chopped)

  • 1 tablespoon 1 salt and pepper

  • 5 ml 5 milk

  • 1/4 cup 1/4 potato starch

  • 1 1 lettuce

  • 3 tablespoon 3 ketchup

Directions

  • Prepare the Dough:
  • In a bowl, mix the all-purpose flour, egg, and salt until well incorporated.
  • Sprinkle with potato starch to avoid sticking, and knead the dough thoroughly. Let it rest for 30 minutes.
  • After 30 minutes, knead it again and shape it into a doughnut.
  • Divide the dough into four equal parts. Using a rolling pin, flatten each part into a circle.
  • In a heated pan, place the flattened dough and roast until it becomes crisp.
  • Prepare the Filling:
  • Put eggs into a bowl, add Parmesan cheese, milk, salt, and pepper. Mix well.
  • Chop the onion and tomato to your desired size, and soak the chopped onion in water to remove the strong scent.
  • Melt some butter in a pan, caramelize the onions until golden brown, and then add the egg mixture.
  • Stir for a minute and add the tomatoes. Cook for another minute. Transfer the mixture to a bowl.
  • Hold one wrap in your hand, shaping it like a taco, and add the chopped lettuce and egg mixture. Top with mayo and ketchup.
