Ingredients

  • 420 grams 420 or 2 packs graham cracker

  • 6 pieces 6 ripe Mangoes

  • 500 ml 500 all purpose cream

  • 120 ml 120 evaporated milk

  • 200 gram 200 crushed graham

  • 240 ml 240 condensed milk

Directions

  • Slice the mango into three pieces vertically. (the one in the middle contains the mango pit and the two side pieces are just fruit) and then, use a glass to separate the flesh from the skin. Slice the flesh into rectangular shape.Using glass to separate the flesh from the skin
  • In a mixing bowl, whisk the all-purpose cream using a stand mixer or a hand whisk. Gradually add the condensed milk and continue whisking until the mixture doubles in size. ( Whisking using a hand whisk can be tiring so goodluckk!)
  • Now it’s time to assemble. To soften the crackers, dip each one into evaporated milk. Then, place a layer of these softened crackers at the bottom of your container.
  • Add a layer of sliced mangoes on top.
  • Top the sliced mangoes with a thin layer of the cream mixture and spread it evenly using an offset spatula or a spoon, followed by another layer of cookies.
  • Repeat the layering process until you’ve used all the cream, mangoes, and cookies.
  • Finish with a top layer of crushed graham crackers.
  • Cover the container and refrigerate overnight, or for at least 6 hours, to allow the flavors to meld and the cake to set.
  • After chilling, take it out of the fridge and slice it into squares before serving.

  • Instead of using crushed graham crackers as a topping, consider topping with sliced mangoes for added freshness.
  • Alternatively, for an ice-cream cake-like consistency, refrigerate the cake for 2 hours and then freeze it overnight.
  • Arrange the mango slices close to one another to enhance the flavor.
  • To make crushed graham, simply smash graham crackers into a powder.
